Easy salmon golden fried rice

This salmon and egg fried rice is made with only very simple ingredients, and anyone can make it delicious without failure. Since it doesn't contain a lot of vegetables, it's not sticky and you can make fluffy fried rice like a professional.

Steps

1 Use your hands to crumble the leftover rice first.

2 Beat the egg in a small bowl before making.

3 Heat your pan over medium-high heat until it becomes hot and then add butter and olive oil (half and half to prevent burning) , swirling to coat the pan. Add
minced garlic in this moment if you want to add the flavor.

4 Add the beaten egg and the crumbled rice quickly. Use a ladle or a wooden paddle to break up any clumps of rice and egg.

5 Quickly coat the rice with the egg evenly. Add the salmon flakes and always continue stirring. (Don’t let your hand rest)

6 Sprinkle the sea salt, black pepper and the sake evenly. Keep tossing until the rice doesn’t stick each other and become fluffy.

7 add chopped green onions and then drizzle the soy sauce along the rim of the pan. This help it grow more fragrant. Then quickly toss the rice to coat evenly.

11 Place the fried rice on a plate. Garnish with the Beni Shoga if you have it at home. It’s done!

Ingredients

Serving size:2 people
  • 2 eggs
  • 4 table spoons salmon flaks (about 60g)
  • 4  table spoons green onions chopped
  • 2 garlic cloves minced (garlic  is optional)
  • 1 table spoon Olive oil or butter (half and half mixed one is the best aroma and taste)
  • 1 table spoon Sake (substitute white wine)
  • 1-2 tea spoon soy sauce (amount is your preference)
  • 1 pinch of sea salt(amount is your preference)
  • some black pepper (or white pepper is also fine)
  • 360g steamed rice (it’s best when they are stale, so left over rice in fridge is totally fine!)
  • Beni Shoga (pickled ginger) if you have

Cooking Tips

Japanese short grain rice has a higher proportion of amylopectin, so more difficult to make fluffy fried rice compared to long grain rice. But it’s much easier to fry when you use leftover cold rice in fridge because Because the starch in the rice changes hard.

If you want to make fried rice with hot steamed rice, I recommend you to cook the rice with a little less water beforehand. Little bit hard rice is suitable to make delicious and perfect texture fried rice. Please make sure to add the rice quickly after the egg and combine mixture so that egg can coat each grain of rice. As a substitute for salmon flakes, you can use grilled and loosened salmon. It is also delicious to make with seafood such as shirasu (small fish), octopus, and Tarako(cod roe)instead of salmon. The salmon flakes also contain salt, so be careful about the amount of salt you put in. You can also decrease or increase cooking oil according to your pan’s size.
