Tomato Somen with Yuzu Kosho

If you are looking for an unique Somen noodle recipe, this would be good for you!
Fry eggs and make shredded egg omelette. Cut cucumber and boiled okras. Stir Hyoshiro dashi tsuyu sauce and Yuzu Kosho (citrus chili paste) to combine well. Add canned diced tomatoes and cold water and stir to mix again.
After cooling the boiled Somen noodle with ice water, drain the noodles well. Dish up the noodles, shredded egg omelette, cut cucumber and okra, pour the sauce mixture, and ready to eat!

- 2 bundles Somen noodle
- 2 eggs
- 1 cucumber
- 4 okras
- 3.4 oz Hyoshiro dashi tsuyu sauce
- 1/3 - 1/2 tsp Yuzu Kosho (citrus chili paste)
- 1 can diced tomatoes
- 5 - 6.8 oz cold water
Cooking Tips
Yuzu Kosho (citrus chili paste) is salty chili paste, so please do not add too much, all flavor will be gone.
Add sesames would be also good for the flavor.
Ingredients and steps are really simple, so it is ready to serve shortly especially during the hot summer season. If it is difficult to make shredded egg omelette, you can use hard boiled eggs instead.
