Miso-Kewpie Mayo Tuna Donburi

This is a quick, nutritious, easily customizable recipe for a weekday meal, made of pantry staples and stuff. 

Instructions:

1.) Prepare your base, aka your rice or grain of choice, have it ready in your bowl.

2.) In a mixing bowl, add drained canned tuna.

3.) Mash the tuna if necessary into tiny pieces.

4.) Add your chopped onions, miso, mayo, mix!!!

5.) Taste test, add salt/pepper as desired.

6.) Transfer the tuna mix on top of your rice. 

7.) Garnish your donburi with sliced green onions, furikake, kimchi or other toppings!

8.) Eat :) ! Best enjoyed with tea or a sparkling drink over ice! 

 

Ingredients

Serves 1 person

Base:

-Your choice of grain/rice (I used mix of quinoa and short grain white rice)

Tuna mix:

-3 oz of canned/pack of tuna

-1-2 tsp of miso(to taste)

-2-3 tbsp of Kewpie Mayo or other JP mayo

-1-2 tbsp chopped onions

-pepper

-salt

Garnish & Toppings:

-Lettuce if preferred

-Sliced Green onion

-Corn

-Kimchi

-Quick pickled cucumbers

-Furikake

-Nori

-Shichimi Togarashi

-Beni Shoga

-Red pepper flakes

-Garlic powder

-Drizzles: Chili Oil, Sriracha, Yuzu Kosho or Gochujang 

Cooking Tips

Notes:

-Make it more refreshing with pickles on the side or extra onions or green onions in the mix or as garnish!

-The tuna mix can get dry, so either add more mayo, water or oil to taste. 

-Have prepared rice ready to go from your freezer! The donburi will only take under 15 min then, from fridge to bowl!

-This tuna mix filling can be used for sushi/onigiri as well!
